Научните изследвания в секцията са свързани с метаболизма на прокариотни и еукариотни клетки и възможности за регулацията му с цел създаване на биотехнологии за получаване на биологично-активни вещества за медицината и стартери и адитиви за хранителната промишленост. Предмет на изследване са следните научни проблеми:




  1. Дрожди – физиология, биохимия и биосинтез на биологично-активни вещества - Ст.н.с. II ст. д-р Цонка Христозова, Ст.н.с. II ст. д-р Костанца Иванова Павлова, Ст.н.с. II ст. д-р Бонка Иванова Цветкова. Изследват се физиологията и биохимия на дрожди (метанолни, хлебопекарски, фуражни) и биосинтез на биологично активни вещества. Изучаване на биологичното разнообразие от психрофилни микроорганизми на о.Ливингстон, Антарктика. Провеждат се изследвания по изолиране, идентифициране и метаболитната способност на психрофилни дрожди за получаване на биологично-активни вещества – ензими, полизахариди, липиди.




  1. Актиномицети и филаментозни гъби – физиология, биохимия, биосинтез и идентификация на първични и вторични метаболити - Ст.н.с. II ст. д-р Венета Боянова Иванова, д.ф.н, Ст.н.с. II ст. д-р Пенка Първанова Алексиева, Ст. н .с. II ст. д-р Адриана Георгиева Гущерова, н.с. д-р Виктория Йорданова Гешева. Провеждат се изследвания по следните направления: Актиномицети – таксономия, физиология, биохимия и биосинтез на ензими, антибиотици и стимулатори. Изолиране, пречистване и доказване структурите на биологично-активни вещества. Филаментозни гъби - оптимизиране на условията за продукция на екстрацелуларни хидролитични ензими от свободни и имобилизирани клетки на филаментозни гъби; охарактеризиране на технически и пречистени ензимни препарати и изпитване на възможностите им за приложение в биотехнологията.



  1. Млечно-кисели бактерии – физиология и ресурс за разработване на млечни продукти с висока биологична и хранителна стойност, качество и безопасност - Ст.н.с. II ст. д-р Емилина Димова Симова, Ст.н.с. II ст. д-р Дора Миленова Бешкова, Ст.н.с. II ст. д-р Гинка Френгова – Изследват се физиологията и ресурса на млечнокисели бактерии и решения за реализиране на здравни ползи. Работи се върху създаване на ефективни биоконсорциумни култури за ферментирали млека и сирена с висока физиологична и хранителна стойност чрез: Инкорпориране на антимикробни агенти с широк инхибиторен спектър към селектирани стартерни култури за осъществяване на защитни функции и такива на биоконтролиращи агенти – регулиране на състава на микрофлората, направляване на процесите на формиране и зреене на млечни продукти и участие в биотрансформацията на субстанциите в млякото; Изследване на протеолитичната система на лактобактерии и асоцииране на селектирани щамове лактобацили с високи пептидолитични профили; Нови подходи за разработване на млечни продукти с висока биологична (със здравни ползи) и хранителна стойност, качество и безопасност.

  1. Биологично-активни вещества от растителни in vitro системи - Ст.н.с. I ст. Младенка Паунова Илиева-Стоилова, д.т.н., Ст. н . с. II ст. д-р Атанас Иванов Павлов, Димка Тунева, Васил Георгиев, Татяна Гочева – изследват се различни растителни in vitro системи и приложението им за получаване на ниско-молекулни биологично-активни вещества (включително адитиви и антиоксиданти за хранителната промишленост), ензими и полизахариди. Провеждат се научни изследвания по оптимизация на биосинтетичните процеси, по изолирането, пречистването и идентификацията на получаваните вещества. Специално внимание се отделя на приложението на различни подходи за повишаване добива и ефективността на биосинтетичните процеси (селекция, елиситиране, двуфазни системи за култивиране и др.)
