Анотация:

Mолекулярно-генетични изследвания на млечно-кисели бактерии (МКБ): видова идентификация с помощта на PCR, ДНК хибридизационни и други високо дисктиминативни молекулярни методи, секвенционен и филогенетичен анализ; типизиране и генeтично паспортизиране на новоизолирани и колекционни щамове; плазмиди, гени и молекулни механизми на полезни и здравословни ефекти.

Биологична активност, пробиотични свойства и лабораторна оценка на технологично значими свойства на млечно-кисели бактерии.
Постижения:

За първи път е характеризирана нестартерната микрофлора на традиционни български млечни продукти със съвременни молекулярни подходи и е получена информация за биоразнообразието на лактобацилните видове в бяло саламурено сирене и катък и е оценен техния пробиотичен потенциал и възможности за приложението им във функционални храни.



Създадена е богата колекция от референтни ATCC култури и оригинални български щамове МКБ от различни екологични ниши (ферментационни продукти и човешки изолати), `аст от които са оценени лабораторно като пробиотични добавки и компоненти на нови терапевтични формули.

Annotation:

Molecular-genetic researches on Lactic acid bacteria (LAB): species identification by different PCR methods, DNA hybridization and other high discriminative molecular methods, sequence and phylogenetic analyses; typing and genetically passportization both of new isolates and laboratory strains collections, studies on plasmids, genes and molecular mechanisms of the beneficial and healthy effects.

Biological activity, probiotic properties and laboratory evaluation of relevant technological properties of lactic acid bacteria.

Achievements: It has been characterized for the first time NSLAB (non starter lactic acid bacteria) of traditional Bulgarian dairy products with modern molecular approaches and there was received information about the biodiversity of LAB species in white brined cheeses and katak. It was assessed their probiotic potential and capacity for application in development of functional foods.

A rich laboratory collection was established from reference ATCC cultures and original Bulgarian LAB strains isolated from different ecological niches (fermented products and human isolates), some of them have been evaluated on laboratory level as probiotic additives and components of new therapeutic formulas.

  • 2007-2011 “Study of antimicrobial and hypoallergenic products of lactic acid bacteria” research NATO, coordinated by INRA-Nantes (France) and Biological faculty-Sofia University.

  • 2008-2011 “Confocal laser-scanning microscopy-for evaluation of Bulgarian bioresurses”, NSF, BULGARIA-2009-2011-Coordinated by Department of cell morphology, Institute of Microbiology, BAS.
